  1. Ever since a period of intensive immersion in the Asterix books, I have had a desperate longing to eat wild boar. But I never have. Because I know that the reality is bound to disappoint, compared to those cartoony feasts.

  2. Ian, boar is a delicacy here in Italy. Only the other day I had papardelle (a broad ribbon pasta) with a cinghiale sauce.

    Delicious. Here, the hunting clubs keep the numbers controlled, and the meat available.

  3. Ian, a good butcher in this country will find you wild-ish boar. Only -ish because, as with many of the Corsican breed, the current crop of British boar are sorta kinda tended, but allowed to roam freely. It is expensive, though. And to get the most from it, make sure you fully understand whichever recipe you choose before you embark on it.

    Though I must admit that using the opportunity to deliver a comprehensive lecture on the benefits of the gold standard, sound monetary policy and free banking reform was probably not the best use of the time, in retrospect.

  5. They live in the hills around us here in Italy & come down to rootle in our olive grove. If you hit one on the road you’re supposed to chuck it into the boot and have a cinghiale party (that’s illegal of course).

    I was once, scouts’ honour, trapped in a chalet in a blizzard with a number of swedish barely legal teens, alcohol, and the boiler went down.

    It was rubbish. They were pretty enough, but were mostly talking about social democracy, being earnest teenagers, and I was a barely legal teen myself so unable to much charm or seduce. And there was comparatively little ‘huddling together for warmth’. In the end I got comprehensively arseholed on bootleg vodka with two finns and a half chinese bloke called Andy.

    Wild boar salami is a good way to go about it initially. But if you want to try it, try it in Italy or France or anywhere else where it won’t cost the earth and they won’t make a complete dog’s breakfast of the cooking. Also, they seem to have a good attitude to killing animals for food there. Whereas with the exception of rabbits and deer we seem to prefer not to.

  8. What Julia said. I think wild pigs will be magnificent rulers. No more ‘Gordon Brown’ type embarrassments.
