Chris Steak House was founded on February 27, 1927 by New Orleans entrepreneur Chris Matulich.[8] It was located at 1100 North Broad Street near the Fair Grounds Race Course, seated 60 people, and had no parking lot. During Matulich’s 38-year management, the business was sold six times, failing each time, and enabling him to buy the restaurant back cheaply from the purchasers

  1. I’ve heard of it happening elsewhere but this is a great model for restaurants because so many idiots think they can run one who’ve never even been a waiter.

  2. Ate at one specific Ruth’s Chris Steak House a fair number of times during the 70s and 80s. Even the girly portions were a bit much for me.

    Never got further west than Hackensack NJ. When it comes to steaks I’m old school, my favourite was Smith&Wollensky. Until 15 years ago they had these excellent $10 burgers, best eaten at the bar.

    I like the US habit of eating lunch at the bar with cutlery and linen, it’s like your own private special space. You get your own condiments and all.

  4. My hairdresser’s did that. She sold up 20 years ago, new chap who took over went bust, she bought it back at a firesale price and is happily still going.

  5. Went to one of the two Ruth’s Chris in DC pretty regularly for twenty years.

    Perfect place for dinner or catch up with a friend or celebrate a birthday, unless you went on a weekend night when it got a little crowded and loud.

    Bone-in ribeye steaks consistently excellent and will, on request, be thrown nearly raw on a superheated dinner plate and allowed to achieve the little browning it needed as it was carried to the table. Also plenty of other tasty stuff.

    That’s what happened with a lot of pubs. People sat on one side of the bar watching money go across thinking it’s an easy way to make a fortune. They eventually became their own best customer.

    I don’t know how anyone is a landlord. It’s like a constantly working job including drunks. But I think like many jobs, it’s people with a passion for it that succeed.

    +1 for Smith & Wollensky (I see they’re in London, too – or were). In NYC I liked Keen’s Chophouse and Gallaghers. Ruth’s Chris I found a very reliable national chain.

    I have fond memories of one eatery in the sticks somewhere with a chalkboard menu that included:
    Prime rib:
    Mountain Woman – 32oz
    Mountain Man – 64oz
    the latter was a bit much, even for me!
